233 Jollof Stuffed Bell Peppers

Ingredients:

  • 4 bell peppers

  • 2 cups jollof rice

  • 1/2 lb ground beef

  • 1/2 onion

  • 2 cloves garlic

  • 1/2 cup 233 Jollof Stew

  • 1/4 cup stock

  • 1 tsp all-purpose seasoning

  • 1/2 tsp black pepper

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Cut tops off peppers and remove seeds.

  3. In a pan, sauté onions and garlic until softened.

  4. Add ground beef and cook until browned.

  5. Season with all-purpose seasoning and black pepper, mixing well.

  6. Add Jollof Stew and stock, simmer for 5 minutes.

  7. Combine with jollof rice and fill peppers.

  8. Place in baking dish, cover, and bake until peppers are tender.
